John has worked in the hospitality industry for over 40 years, both in the UK and Australia, and his experience in hotel/restaurant management and staff training skills have been honed into the role he enjoys as "mine host".

Lesley's varied catering experience gained in Sydney is reflected in her ability to meet guests' requirements whether they be new food trends or traditional favourites.
